(Yields about 3 cups) Serves 6 to 10
1 cup plain nonfat yogurt
2 avocado, peeled, pitted and halved
1 cup nonfat sour cream
1 clove garlic, minced
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon ground cumin
1 tablespoon lime or lemon juice
1 teaspoon jalapeno pepper, seeded and minced
salt and pepper, if desired
For best results, strain yogurt overnight using cheesecloth, a strainer, and a medium size bowl (covered and refrigerated overnight). Add strained yogurt, sour cream and avocado to bowl of food processor fitted with blade attachment. Add remaining ingredients. Process and puree until smooth. Cover and refrigerate at least 1 hour to blend flavors.
