Chocolate Chip Oatmeal Cookies

Makes about 3 dozen


 


Ingredients


½ cup butter


1 cup packed brown sugar


2 eggs


½ cup applesauce


2 teaspoons vanilla


 1 ½ cups whole wheat flour


1 teaspoon baking soda


¼ teaspoon salt


½ teaspoon cinnamon


3 cups oats


1 cup flaked coconut


1 cup chocolate chips


 


Directions


Preheat oven to 350.


 


In a large mixing bowl, beat butter and sugar until light and fluffy.  Add eggs, applesauce and vanilla and beat until smooth.


 


In a separate bowl, combine flour, baking soda, salt, and cinnamon.  Add to butter and brown sugar mixture and beat until smooth and creamy. 


Stir in oats, coconut and chocolate chips.


 


Drop by rounded teaspoons onto nonstick cookie sheet lightly sprayed with cooking oil.  Bake 10 minutes or until light brown.


 


Remove sheet from oven and allow cookies to cool about 3 minutes before placing them on a wire rack to cool.
