Recipe: Smokin' Wings with 3 Green Chili

Wings

3 pounds jumbo chicken wings cut into drummies and wings
1 cup of Oskar Blues BBQ rub or your brand of choice
2 pounds of smoking wood of choice (we use local apple)
1 small bag of charcoal

Hot sauce

1 Tablespoon honey
4 hatch green chilies - roasted, peeled and pureed
2 Tablespoons finely chopped garlic
2 fresh jalapenos, pureed
2 fresh Serrano chilis
1 cup Oskar Blues G'Knight Imperial Red beer
2 Tablespoons rice wine vinegar
Salt to taste

  1. Start coals and soak smoking wood with water
  2. Meanwhile, rub the wings with the BBQ spice 
  3. Place apple wood in to the fire and adjust to medium heat
  4. In a medium sauce pot, combine the green chilies, vinegar, garlic and honey
  5. Warm over the grill or on a side stove for about 10 minutes
  6. Add the G'Knight beer to the pepper mixture and season (salt) to taste
  7. Place wings on the grill for about 10-15 minutes per side
  8. Serve the wings plain with the sauce on the side or toss the wings in a bowl and serve right away

Serving suggestion: Blue cheese, celery and carrots for dipping on the side
