Ingredients:
-1 cup all-purpose flour
-1 cup whole wheat flour
-2 tablespoons flax seed, ground
-1/4 cup sugar
-1 teaspoon baking powder
-1 teaspoon ground cinnamon
-1/2 teaspoon baking soda
-1 dash nutmeg
-1/4 cup butter, chilled
-1 cup apple, shredded
-1/4 cup walnuts, chopped
-1/2 cup lowfat 1% milk
-1 tablespoon vanilla extract
-2 tablespoons lowfat 1% milk
-1 1/2 teaspoons sugar, combined to make cinnamon sugar
-1/2 teaspoon cinnamon
Directions:
1. Preheat oven to 400.
2. Whisk together flours, flax seed, sugar, baking poweder, cinnamon, baking soda, and nutmeg in a large bowl. Cut in butter and mash with a fork until mixture resembles coarse meal.*
Add apple, walnuts, 1/2 cup milk, and vanilla extract stirring until moist.
3. Turn dough out onto a lightly floured surface and knead lightly with floured hands. Divide dough in half and form into a small circle (about 6 inches wide). Cut circle into 5 or 6 wedges - cutting almost but not entirely through.
4. Brush top of wedges with 2 tablespoons milk and a small sprinkling of cinnamon-sugar. Bake at 425 for 15 minutes or until golden. Serve warm.
