A man claiming to be a chef called those with celiac disease "idiots" and said when they would order gluten-free food, he would serve them meals with gluten and watch to see what happened.

The chef, who last worked in Glenwood Springs, mocked people who eat gluten-free and said he'd never seen any ill effects from slipping them gluten.

9NEWS is not naming the man since his posting was taken down before we could see it. However, it is living on in blogs, gluten-free websites and on Facebook.

The woman who answered the man's listed phone number said he wasn't available.

The owner of the Italian restaurant where he last worked has been bombarded with calls.

"He never was a chef here," the owner of Florindo's, Florent Gallicchio, told 9NEWS, "so he's a very vengeful person. I don't know what's wrong with him. But whatever he say on the Internet, whatever, is a bunch of anger and liar. He never was a chef at Florindo's. He worked here for a few months and he was a part time server."

Gallicchio says the waiter claiming to be the chef at his restaurant left town a few weeks ago.

"I am the chef! There is nobody else cook for me! If he's going to hurt my business he's going to hear from me and my lawyer!" Gallicchio said.
