Christmas recipes in a pinch

KUSA - It's 3 p.m. on Christmas and your spiraled ham is almost done in the oven. Your pies are perfectly golden brown.

Your guests will arrive in an hour and all of sudden you realize you haven't cooked any appetizers!

9NEWS Reporter Colleen Ferreira has some quick and easy hors d'oeuvres that will wow your guests, including Chorizo-stuffed jalapenos, spiced mixed nuts and savory roasted tomato palmiers.

All of these tricks have four ingredients or less. Colleen shows how easy it is to make a scrumptious little bite that will satisfy your guests until its time for Christmas dinner.

Chorizo stuffed jalapeños

-10 jalapeños sliced, seeds taken out

-12 ounces cream cheese

-8 ounces cooked chorizo, crumbled

-Bunch of cilantro

Boil sliced jalapeños for about 5-7 minutes to remove some of the heat. Throw peppers into a ice water bath till they're cold. Combine softened cream cheese, chorizo and about 1/4 cup finely chopped cilantro in a bowl. Drain jalapeños and dry each pepper with a paper towel. Stuff each pepper with the chorizo filling. Bake at 400 degrees for 15 minutes or until the bottom of each pepper is a little brown.

Spiced mixed nuts

-4 cups mixed nuts

-1/2 stick melted butter

-1/4 cup dark brown sugar

-1/2 tsp cayenne pepper

Melt butter and sugar together. Toss with mixed nuts. Sprinkle cayenne pepper over the mixture. You can add more or less cayenne pepper to your liking. Mix everything together and spread nuts on greased baking sheet. Bake on 375 degrees until the nuts turn light brown. Usually it takes around 15-20 minutes. Every 5 minutes, fork through the nuts and move them around so the sugar doesn't burn. 

Savory Roasted tomato palmiers

-One sheet puff pastry

-1/2 cup roasted tomato pesto

-6 ounces goat cheese, any kind

Make sure puff pastry is thawed. Unfold it onto a thin layer of flour. Spread pesto onto puff pastry covering the entire one side of the pastry. Take goat cheese and break off small pieces and spread over pesto. Roll pastry and refrigerate for an hour if possible. Slice into 1/4 inch circles. Bake at 375 degrees for 20 minutes until puff pastry is golden brown.
