Make your Broncos party 'souper'

KUSA - Getting together some friends to watch the Denver Broncos face the Seattle Seahawks on Super Bowl Sunday?

David Bondarchuck with Scratch Catering visited 9NEWS to share some 'souper' recipes to make your Super Bowl party flavorful.

Scratch Catering Services' Souper Vegetable Bowl Soup
1 Tablespoon Olive Oil
1 cup diced Onion
2 cloves Garlic minced
Kosher Salt and Fresh Cracked Black Pepper to taste
2 Bay Leaves
1/4 teaspoon dried Thyme
6 cups Vegetable Stock (Scratch-made or store bought)
1-28 ounce can diced Tomatoes
Carrots-Diced 3/4 cup
Celery-Diced 3/4 cup
Green Beans-cut into 1 inch pieces: 3/4 cup
Corn-removed from cob: 3/4 cup
2 cups Yukon Gold potatoes cut into 1-inch cubes

In a stock pot sauté the onion in the Olive Oil until translucent but not browning. Add garlic and Salt and Pepper, bay leaves, and thyme.

Stir to combine.

Add remaining Ingredients and cook on medium-low until brought to a simmer.

Cook on medium-low until mixture is slightly thickened. about 45 minutes to 1 hour.
*Never let this reach a full boil

Adjust Salt and Pepper prior to serving.

*This soup is very versatile you can switch up the vegetables Try adding or substituting Peas, Kale, Garbanzo or Kidney Beans, Bell Pepper, Broccoli etc.

Scratch Catering Services' Souper Bowl Chicken-Corn Chowder

2 Tablespoons Unsalted Butter
1 Tablespoon Olive Oil
1 cup diced Onion
3 Tablespoons Flour
1/2 teaspoon dried Thyme
Kosher Salt and Fresh Cracked Black Pepper to taste
3 cups Whole Milk, room temp
3 cups Chicken Stock (Scratch-made or store bought)
3 Boneless/Skinless Chicken Breasts, cubed into 1 inch pieces
2 cups corn Kernels-removed from cob
Carrots-Diced 1/2 cup
1 cup diced Celery
2 cups Yukon Gold potatoes cut into 1-inch cubes

In a stock pot, boil cubed chicken pieces until done. strain off the water and set aside in a dish.

In the same stock pot, melt the butter in the oil and add the onion cook until translucent but not browning. Add Salt and Pepper, and thyme stir to combine.

Add flour to absorb grease and create a rue.

Slowly add Milk, and Stock, whisking to combine.

Add remaining Ingredients and cook on medium-low until brought to a simmer.

Cook on medium-low until mixture is slightly thickened. about 45 minutes to 1 hour. Stir Occasionally
*Never let this reach a full boil

Adjust Salt and Pepper prior to serving.
*Spice it Up: by adding a diced Jalapeño, OR 1 teaspoon Red Pepper Flakes.

Scratch Catering Services' Souper BBQ Ranch Beef Brisket Sandwich

On a 6-inch Fresh Baguette split in 1/2, add Ranch Dressing (Scratch-made or store bought), top with Fresh Spring Mix Lettuce, and BBQ Beef Brisket.

Serve.

*For this recipe I used my United in Orange Marmalade BBQ Sauce, to toss the braised beef brisket in.

Scratch Catering Services' Souper Chicken Pesto Sandwich

On a 6-inch Fresh Baguette split in 1/2, Spread a thin layer of Basil Pesto on 1/2 of the bread (Scratch-made or store bought), Top with Grilled Chicken Breast Strips, Sun-dried Tomatoes, Fresh Buffalo Mozzarella, and Baby Spinach Leaves.

Scratch Catering Services Signature: Orange BBQ Sauce

2 Tbsp Olive Oil
2 tsp dried thyme leaves
1/2 onion
3 tsp minced garlic
2 cups ketchup
1 cup orange marmalade
2 tablespoons Dijon Mustard
1/4 cup molasses
2 tablespoons white vinegar
1 teaspoon ground pepper
