Classic holiday treats made with ice cream

Blue Bell Ice Cream Company stopped by the 9NEWS studios on Sunday morning to show off the holiday treats made with their holiday ice cream line.

The line is comprised of four flavors: Peppermint and Spiced Pumpkin Pecan as well as two new flavors, Banana Nut Bread and Christmas Cookies.

According to Blue Bell's Denver Sales Manager Russ Pangle, the desserts are easy to create and made with minimal ingredients.

Blue Bell provided the recipes for the two desserts featured.

Holiday Spiced Pumpkin Pecan Pie

-1 baked pie shell
-1 ½ quarts Blue Bell Spiced Pumpkin Pecan Ice Cream, slightly softened
-2 to 3 T. caramel dessert topping
-8 roasted and salted pecan halves
-More caramel dessert topping, optional
Wrap cooled pie shell in plastic wrap and freeze for 30 minutes. Remove pie shell from freezer and unwrap. Scoop ice cream into pie shell, mounding slightly in the center. Smooth surface of ice cream. Wrap dessert in plastic wrap or foil and freeze for 4 to 24 hours. Remove pie from freezer 10 minutes before serving. Unwrap and drizzle caramel sauce over the ice cream. Place the pecans in a circle between the center and the edge of the ice cream. Slice into eight slices so that each slice has a pecan on the center top. Place each slice on a chilled dessert plate. Drizzle more caramel topping on the slice or plate, if desired. Makes 8 servings.
Note: A graham cracker pie shell can be substituted for the baked pie shell.

Chocolate Peppermint Napoleons
-12 chocolate wafers
-1 pint Blue Bell Peppermint Ice Cream, slightly softened
-4 T. frozen whipped topping, thawed
-1 small peppermint candy cane, crushed
-4 T. purchased chocolate fudge sauce
Place one cookie in the center of a dessert plate. Top with 2 - 3 tablespoons ice cream. Repeat for another layer. Place a third cookie on top of the second layer. Press gently to spread the ice cream to the edges of the cookies. Add a 1 T. dollop of whipped topping and sprinkle with crushed peppermint candy. Repeat to make 3 more desserts. Drizzle each Napoleon with chocolate sauce or serve the sauce with the dessert and let everyone add the amount of sauce they want. Serve immediately. Makes 4 servings.
